Bountiful Harvest And How To Use It

This week we are back from our holidays and are settling into farm life. We ran out of water on Thursday (and had a giant hole in the pipe from the tank to the house). We have got some more water into the tank, but must be the only family in NSW praying for more rain to fill it properly.

For my Sunday Pinterest link up this week, I am sharing some of the ideas I got to use up all the vegetables and fruits that our garden currently has. I made my own zucchini cake earlier in the week and it was yummy, but we need to make alot more yet!

My lovely mother in law knows I love rhubarb and brought me back a huge bunch from her mother's house, so I have been trying to think of things to make with it. Here are some of my favourite ideas I found:

Rhubarb cobbler is always a favourite. I love it in winter with a good spoonful of vanilla ice cream. I may freeze some rhubarb for later!

We also have heaps of green beans. This bean salad has craisins and walnuts, and sounds delicious.

As I have written previously we have plenty of zucchinis. The biggest issue is trying to find enough recipes to use them in, and still give some variety. Thanks to every one who posted or emailed me recipes. I will be giving a few of them a try over the next few weeks. I love stuffed zucchinis, so this may be for dinner one night soon.

We went mulberry picking yesterday, and although the tree didn't have many this year (we had a super late frost which killed off lots of the fruit), I have small bucket to make something with. Not sure what yet, but Country Boy is hinting for some pies, like these ones.

So as you can see, I am enjoying the bounty of food that we can grow, but at the same time, I am trying to think of ways to keep it for when the garden isn't so productive.
