Yesterday was my day at home, and I have been wanting to make a cinnamon twist for a while, so I did.
100g butter cubed
14g yeast (2 sachets or 2 teaspoons)
2c plain flour
1T caster sugar
50g butter melted
1/2c brown sugar
1. Heat milk and butter in a saucepan until the butter melts.
2. Remove from heat and allow to cool slightly.
3. Sprinkle yeast into the milk. Stir and allow to sit for 10 minutes.
4. Place flour and caster sugar in a bowl.
5. Pour the milk and butter mix into the flour. Mix to form a dough.
6. Turn the dough onto the bench and knead the dough for 5 minutes until it become smooth - it will look halfway between pastry and bread.
7. Place the dough in the bowl, cover with cling wrap and place in a warm spot for 1 hour to allow to rise.
8. Preheat oven to 200*c.
9. Briefly knead the dough again (this is called knocking back).
10. Roll the dough out into a large rectangle, approximately 7mm thick.
11. Liberally brush the butter over the dough.
12. Sprinkle the sugar and cinnamon over the dough.
13. Roll the dough into a spiral.
13. Cut the roll in half longways, then twist the 2 open halves together.
14. Place on a baking tray and allow to sit for 20 minutes in a warm place.
15. Bake for 12 minutes or until cooked through.
